Biological characteristics

1. Lactobacteriaceae, Pediococcus, Gram-positive coccus ;

2. The cells are spherical, often arranged in pairs or rows, non-motile;

3. Facultative anaerobic; the optimum growth temperature is 25-40℃, the temperature range for growth is wide; reproduce by binary fission, with fast growth;

4. The optimum pH is around 6.0, and it has strong salt tolerance;

5. Safe, unconditionally pathogenic; metabolism with L-(+) lactic acid and lactic acid pediocin, etc.
